Hey fellow Good Looking Losers...
I've been lurking on this site for a while now and been loving what a resource it is and this is my first post (hope it's the right place).
I've been following the no carb diet for quite a few weeks now and it's amazing how fast the fat has been melting away. Thanks to such recommended bonuses like Safflower Mayo, my meals have also been tasting good and I've been barely even missing the carbs which is awesome!!
However, every time I have my lunch of chicken breast, I seem to have to push myself through a whole gag reflex/"this is gross" experience. The chicken is good, cooked well, and tastes fine, however I think my body is just so sick of it sometimes that often it's even hard to swallow. The thing is, I LOVE chicken! But, I think I miss eating it with something else... like sauce or carbs or whatever. I feel like I need some way to spice up my chicken meal somehow that wouldn't involve having to eat more carbs or making it fatty. Do any of you have any cooking type of suggestions that would make the chicken enjoyable to eat? Can I eat it with 1 tablespoon of Safflower mayo even though I already eat that in the morning with my eggs (tastes amazing) or in the evening with my tuna? Is that too much mayo in one day?
There are plenty of ways to spice up your chicken with some yummy recipes.
I normally buy them pre-marinated from the butcher like "Lemon & herb" or Sun-dried tomato flavour but these are just as easy to make yourself!
Try this for a recipe:
Get some sun-dried tomatoes
a couple of Garlic cloves
a drizzle of olive oil
a pinch of sea salt if need be but i hardly use it
You can even add say 1 tablespoon of pine nuts if that
Put all of the above into a blender - process it all - marinate the chicken and leave in the fridge for an hour or even over night and then grill the chicken. No need to add anymore oil for when cooking! Should come out good!
Some garlic cloves
tiny bit of ginger
2x teaspoon of hunny
half a chilli
Now some may disagree but you can add 1 or 2 teaspoons of soy sauce OR find a substitue for it, depends what you have in your local grocery store.
Mix and then blend and then repeat above step for refrigeration and cooking!
You can add in other herbs and spice and make it more flavour-some!
I sometimes will cook 2-3 chicken breast at once for the week ahead and then marinade another batch in something diferent and cook them mid-week etc.
