This is my formula that took around a year or so of trying different combinations to maximize the height without rolling your ankle all the time. I like having a 1 inch boost on the whole foot because it makes my shoes crease less around the foot. Boat shoes would probably be around the 1.1 inch range for me and some high tops could probably allow an extra calden or two. All shoes are different (ankle support) so having separate incremental insoles is better.
If I wear a shoe with a decent medium top (vans alomar otw, jordans etc...)
1. Spenco Total Support .6 inch (top)
2. Spenco Polysorb .6 inch (middle)
3. Calden Half Inch .5 (bottom)
My vans could only handle the .5 plus .6 polysorb until I found these (anything higher caused ankle rolls). Now I have stability to add another .6 inch and it feels the same as 1.1 inch. So adding these brought it to 1.7 inch boost. These aren't as comfortable on top as the cross trainers, but worth it for that extra .6 inch.
I wore these for years because i worked on my feet all day and they are comfortable. The bump between the heel and toes make a huge different on fatigue and I haven't found any other insoles I can recommend for everyday use. I use 2 of these stacked in my nike free run gym shoes (1 inch boost). These are mad comfortable.

These only raise the heel. I use them to compensate the heel once the rest of the foot is maxed out with full foot insoles.

Early on I found these to be too extreme. I take two of the flaps out to make it around 2 inches. I don't really understand why the bubble is there when the point is to raise the heel. (didn't really find it more comfortable, just weirder when you sink down when you stand). Don't recommend these, but figured I'd mention them since I've tried them.
