I'd personally tell the hair stylist to do what he thinks is best - there's a reason he costs $80, right? He knows better than me, and you, and everyone else on here. Just tell him you want something masculine, explain you're a bit insecure about your ears, and see what he says.
With the gym stuff - if you can still do pullups, squats, deadlifts and rows you're fine. With bench - can you do dumbbells benchpress? Bicep curls? Tricep extensions? Chest flies?
You can still build a big body even if you can't benchpress. Just need to find out which exercises you CAN do.
Dude, your ears are totally fine. Mine look the same if not more prominent and I wear a skin fade on the sides. Don't let your ears determine what haircut you get, having a good looking, cool haircut is 100x more important. I'm not an expert but I like the haircuts you posted. Bring a picture and say "I was thinking maybe something like this, but you're the expert so what would you recommend?" I do that all the time and it works great. But you don't need to pay 80 for a haircut. Find a couple of cool looking guys with good haircuts and ask them where they go and who the person to see there is. I used to go the those expensive salons, now I go to hole in the wall places for a third of the price and get better haircuts than before.
In the pic you posted it looks like the left side is short and disconnected, but the right side looks longer and tapered like yours? I prefer the shorter look. It's clean and has more style or edge to it imo.
I think it would look even better if you got a 3 or 4 on the sides, maybe 2 faded to 3 or 3 faded to 4.
I actually have to say: don't just ask the barber to do whatever he thinks best. Barbers actually HATE when customers do that, because it gives them no fucking clue what you actually want. All they're gonna be thinking is "how do I pick the safest haircut so I don't piss off this customer".
Go in with photos. Go in knowing what you want. The more specific, the better.
Here's what I would say if I went to a new barber (this is just how my haircut is done, but it shows how much detail I give them:
"Long on top with a triple zero razor fade, medium fade"
AND I'd have a photo on my phone ready for them to compare with.

OP, the reason why your new haircut doesn't look like the dude in the pic you posted is precisely because it's short on the sides, next time ask them to give you the exact same haircut as the dude in the pic. And don't go to a $80 hairstylist, you can get excellent haircuts from inmigrants who make their living by cutting hair and do it well.
